Oatmeal Raisin Cookies (with a twist!)

Ingredients:

  • 1 ¼ all purpose flour

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • ½ teaspoon cinnamon

  • ¼ teaspoon nutmeg

  • ¼ teaspoon allspice

  • 1 cup butter (2 sticks), softened to room temperature

  • ¾ white sugar

  • ¾ brown sugar

  • 2 eggs

  • 1 ½ teaspoons vanilla

  • 3 cups old fashioned oats

  • 2 cups raisin

  • Twist: 2 cups butterscotch chips


Directions:

  1. Preheat oven to 375.

  2. Whisk flour, baking soda, salt, spices in a small bowl.

  3. Beat butter, sugar, eggs, and vanilla in the bowl of a stand mixer until light and fluffy.

  4. Slowly add in the flour mixture.

  5. Manually add in oats, butterscotch chips, and raisins. It might seem like a lot of mix-ins but it so scrumptious.

  6. Form into the size of your preference about 1 ½ inches apart. I like them smaller so that the edges are more crispy.

  7. Bake for about 12-15 minutes, or until the edges are slightly browned. The cookies won’t spread out that much so don’t worry about that.

  8. Cool for a few minutes.

  9. Enjoy!
